Why Chocolate Goes So Well With Coffee: A Speculation

Thinking about dinner tonight got me wondering why coffee goes so well after a meal, especially with dessert, particularly when that dessert is chocolate. Perhaps it is the contrast between the slightly bitter aftertaste of coffee combined with the palpable sweetness of chocolate. Or could it be the combined "high" one gets when consuming the double stimulant that the two substances offer the metabolism?

Maybe the fact that coffee's known to accelerate the metabolism is to account for it. After all, when one is replete after an especially good meal, one needs something to get the digestive mechanism in high gear. Maybe coffee accelerates the appetite, effectively making room for more food. And when that food happens to be something delectable, like chocolate, or something else that is sweet, the process is even more noticeable.

Whatever the biological reasons, there is no doubt that coffee and dessert are one of nature's true pleasures. Maybe it is best not to over-analyze it, just simply enjoy it for what it is.
